Brew Time: 5-7 Minutes

 

Gàiwǎn

Gram scale

Kettle with thermometer

Tea tray or waste bowl (cháwǎn)

Serving vessel or justice cup (gōngdào bēi)

Teacups

Measure out 5g of tea and set aside

Add 750ml of water to the kettle and heat to the suggested temperature

 

Pour hot water into the gaiwan, the justice cup, and each tea cup

Wait 10 seconds and dump the water into the waste bowl

 

Rinsing the tea removes dust and helps prepare the tea leaves to release their full flavor

Transfer 5g of tea into the gaiwan

Pour 100g of hot water in a circular motion, saturating the tea leaves evenly

Let the tea steep for the suggested time

Hold the gaiwan as shown and dump the water into the tea tray or waste bowl

 

Pour 25g of hot water directly into

the middle of the gaiwan

Pour another 75g of hot water in a circular motion towards the edges of the gaiwan

Allow the tea to steep for suggested time

 

Pour the tea from the gaiwan into the justice cup

This ensures that the tea isn't over-steeped and that each guest tastes the same flavor from the tea

Pour the tea from the justice cup into the teacups and enjoy!

 

Between steeps, leave the lid off to allow the leaves to cool down

For resteeps, pour 100g water slowly in a circular motion along the edges of the gaiwan, to avoid hitting the leaves directly

Allow the tea to steep for the suggested time
